At Le Binchotan, the latest French-Japanese tapas restaurant bar to open in the buzzy Amoy Street area, fusion food is a celebration, not a dirty word.

As the name of the restaurant suggests, the main cooking method here is grilling by binchotan — the charcoal produced from oak trees in the Wakayama prefecture of Japan, is purported to be able to burn at lower temperatures and for a longer period of time.

The menu is divided into small plates, large plates and gourmet "yakitori" sticks. From chilled starters right down to desserts, a majority of the dishes had a grill component.
