The Fullerton Hotel Singapore's The Lighthouse has recently revealed “Cucina Costiera”, a tasting tour of dishes true to Italy's south with authentic regional recipes from Campania, Sardinia and Sicily.
However, an oldie but goodie is the Paccheri di Gragnano which is, in our opinion, one of the best pastas in town. This epic creation is made with al dente ribbons of pasta topped with beef ragout which has been braised for seven hours. The meat-to-pasta ratio on this one is off the charts!
The Tonno Fresco Saltato in Padella al Salmoriglio, however, offers an authentic taste of Southern Italy's coast with seared yellow fin tuna, Amalfi lemonand Italian parsley.
Pre-dinner, make sure to watch the sunset from the rooftop bar as it offers one of the best views of the marina.
